Oak Street Hotel Rose Petal Jelly

This is a lovely jelly with a scent of roses and a light fresh taste suited for cream biscuits or tea cookies. We use roses from our farm, and recommend you use only organic rose petals that have a nice scent. Petal colors can be mixed. Gather petals just after the morning dew has dried.

6 cups rose petals
6 cups water
4 cups sugar
3 Tbs. fresh lemon juice, can add another tablespoon to taste
6 Tbs. powdered pectin – Sure Jell or Certo, not low sugar

Bring water to a boil. Stir in rose petals and weigh petals down for a minimum of 6 hours. Beware, the petal color may stain a bowl or plate used to weigh down the petals in the hot water.

Strain the petals, squeezing them to release any extra infused water. Prepare clean jars and lids. Prepare the hot water bath.

Add sugar to the infused liquid and bring to a boil. Follow pectin instructions. Reduce heat. Add lemon juice and pectin stirring constantly.

Quickly fill jars. Secure hot lids. Place in hot water bath. Bring canner water to a boil and time it for 5 minutes. Place hot jars on a towel or rack. Do not move for 6 or so hours for the jelly to fully set and cool.
